Although the street of Chinatown was crowded, there were no Chinese restaurants here that would be a tourist attraction. The stores lined up in a row were all selling foodstuffs, and many people came to buy them. Perhaps some of the shoppers were from Chinese restaurants operating nearby.
The fish shop in the photo was one of the stores on the street lined with food vendors. Fish with their heads cut off were randomly laid out on the counter. It was a big fish. But I had no idea what it was called.
I looked around the store and saw a man standing across the table with a knife in his hand. It seemed that he had already cleaned most of the fish he had purchased, and he was no longer cleaning fish. Instead, he was sharpening his tools of the trade with a whetstone on the table. All he had to do was sell the fish when orders came in. He moved the knife in small increments, occasionally stopping to check the finish of the blade. He was sharpening them carefully.
