Fishmonger filleting fish into three pieces

The man was slivering both sides of a fish

Shot at Yamuliao Market in Tainan, Taiwan.

Because this fishmonger was crowded with customers, I was part of a crowd and enjoy watching the fishmonger working. The man working here was busy and never stopped moving.

A fish was put on the wooden chopping board. He was making a slit along the length and cutting the symmetrical right and left halves, leaving the backbone. Although he was busy, he worked in a matter-of-fact way. I thought his face was a face of a craftsman.
