The aisles of the Shuixian Temple Market were dimly lit, with only a few bare light bulbs hanging in places. The subdued light accentuated the atmosphere of the market. Walking through this kind of market, one sometimes comes across stores selling “Japanese food. However, as a Japanese person, I find that most of them are not even remotely similar to Japanese food.
The store I found was not Japanese food. Instead, it was a store selling Korean prepared foods. The storefront was lined with several large trays, each filled with piles of bright red kimchi. In Taiwan, food tends to be less seasoned overall. Perhaps that is why stimulating flavors like kimchi are so fresh and popular.
At the storefront, a man was stirring the kimchi with a large spoon in his hand. He is mixing carefully and vigorously so that the contents of the tray are evenly distributed. The contrast between his serious expression and the red-tinted tray was strangely striking in the dimly lit market.
