As I wandered through the Yamuliao Market, I saw another woman making dumplings. On her desk, a large bowl was heaped with the contents of the dumplings, and next to it, a bundle of dumpling skins lay neatly on the table.
A woman wearing an apron with a cute bear print was busily wrapping dumplings. However, she seemed unable to stop working when spoken to, frequently interrupting her work to chat with her co-workers. When I pointed my camera at her, she was talking with a colleague, making exaggerated gestures. Her animated expression seemed to add a sense of liveliness to the work of making dumplings.
By the way, in the Chinese culture, dumplings are mostly made with sui-gyoza. Although there are of course grilled dumplings, they seem to have the image of a dish that makes use of leftovers. It is as if a butcher uses leftover meat to make fried food. I watched the women's deft work as I thought about this cultural background.
