A variety of foodstuffs were laid out on the table. One old woman sat in a chair working with her hands, while another woman stood beside the table, busily working. They appear to be making prepared foods. Both of them are wearing plastic gloves. From their appearance, one senses that there may be some kind of hygiene agreement in place.
In front of the old woman was a curtain. I wondered what the Chinese word for a bamboo mat was. There was white rice neatly laid out on the makizome, and it looked like they were in the process of making sushi rolls. Sushi is very popular in Taiwan, and you can find sushi restaurants everywhere in town. Therefore, it is not surprising to see people making sushi rolls in the market.
The style of sushi may be a little different from that of Japanese sushi, but the sight of these women working so efficiently on the spot made me realize that sushi has taken root in this part of the world.
