Because many customers came here to buy fresh produces, the market was bustling and the people working in the market was busy. Although the greengroceries just set out the vegetables in the storefront, that was not going to happen for the butchers. They had to cut meats before selling. More customers came, they cut more meats.
It could be a tough physical labor. So the butchers might be tired in the afternoon. When I came to a butcher during walking around the market, I found a butcher sleeping on the tummy in the storefront. He had cut a large amount of meat already. He didn't awake even he attracted flies.
