Chinese people eat beef, of course, but when it comes to Chinese food, pork has an overwhelming presence. This may be simply because I myself prefer pork to beef. Still, as I walked around this duck and mother-in-law market, I got the impression that the market was indeed filled with pork.
As usual, there was a wide variety of different cuts of pork on display in the butcher stores. Among them, what caught my eye was the pig's feet. The haphazardly placed pig's feet were placed just barely on the edge of a stand at the front of the store, and looked as if they would fall off if shaken slightly.
Moreover, the pig's feet were fresh to look at, and their rawness was remarkable. When I looked at it, the presence of just one leg seemed strangely realistic, as if it were about to start walking at any moment. It was a place where the vitality of the materials and the liveliness of the market seemed to be one and the same.
