The store where the man in the photo works sold the meat of a domestic duck. A round wooden cutting board was placed at the front of the store, and on it were rows of duck heads. The heads were all candy-colored and looked like they had already been smoked or cooked in some other way. I have eaten duck meat before, but never the heads. But the fact that they are on the store shelves like this suggests that the heads are also being used as a fine ingredient.
The man was holding a large hair plunger in his hand and gripping the beak of a domestic duck. He was removing the hair from each duck one by one. Apparently, even after cooking, some fine hairs remained, and he was carefully removing them. Just watching him carefully remove the hairs one by one was a daunting task.
Still, the man continues to work deftly and patiently. His attitude showed the professionalism of a man who does not cut corners in every detail. It was as if I could catch a glimpse of his respect for the ingredients in this steady work done silently in the midst of the everyday scenery of the market.
