The staff were busy working at a store in the Linjiang Night Market. It was a store that sold Shengjian Bao. It is a Shanghai dim sum dish made by wrapping a ground meat filling in a flour crust and steaming it on a griddle. The division of labor seems to be well established, with each person working silently on his or her own task. The person who wraps the bean paste in the dumpling, the person who steams the dumpling on the griddle, and the person who sells the finished dumplings to the customers were all busily engaged in their respective tasks. In any case, Shengjian Bao sold like hotcakes as soon as they were made. They are a popular snack here.
The man in the photo was in charge of wrapping the content in the store. He was wrapping the bean paste into the dumplings. A can filled with minced meat was placed on the table, and the man scooped it out and wrapped it into dumplings with a familiar hand. I wondered how many fresh Shengjian Bao he wraps in a day. From the looks of it, he must be wrapping quite a few. I am afraid that if I keep doing the same kind of work, I might end up doing the same thing in my dreams after I finish work and go to bed at home.
