Next to the shop in which some cages were placed, there was a store selling roasted chickens. The layout could be efficient. It was easy to carry chickens to the kitchen. Yet it meant the hell lied side-by-side for chickens in the cages.
Some plucked chickens were piled up in the kitchen. And a man stood beside them. A gas burner was in his hand. He was just heating chickens over a gas burner there. The chickens were roasted to a beautiful brown.
Watching him roasting with a gas burner, I thought there were no roasting machines in this market. I saw other kitchens making roasted chickens in addition to this store. Yet I have never seen any machines used for cooking rotisserie chickens.
Perhaps, it requires time much more than using a gas burner. It is said Thai people are festinating. So no one prefers to use any rotisserie machines.
