The chickens were grilled until golden in Khlong Toei Market

Next to the store where the cages containing live chickens were placed, there was a kitchen where whole roasted chickens were prepared. This is an efficient arrangement. As soon as the chickens are removed from the cage, they are ready to be roasted whole. From a different perspective, this is like hell and next door for the chickens in the cage. Getting out of the cage means going to the other side.

In the kitchen, there was a pile of chickens with their feathers plucked off, and a man stood beside them. He has a large gas burner in his hand. The man was using it to cook a whole roasted chicken. The chicken heated by the gas burner is roasted to a golden brown.

As I watched the man using the gas burner, I noticed that there is no machine for making rotisserie chicken in this Khlong Toei market. There were other places besides this kitchen that made whole roasted chickens, but they were all heated with a bass burner and none of them had a rotisserie grill to slow cook them.

Perhaps it is cheaper to use a gas burner than a rotisserie grill, or perhaps no one uses a time-consuming rotisserie grill because Thai people are said to have unexpectedly short tempers. Or maybe they just don't know what a rotisserie grill is. Any one of them could be right, and any one of them could be wrong. I didn't know the right answer.
