A man was grilling something on a round grill attached to a roadside stand. At first glance, it looked like he was making a crepe, but this was India. It was not a crepe. What the man was making was a dosa, a crepe made of fermented beans and rice.
Dosa is a common dish in India and is eaten mainly in southern India. The man was making what appeared to be a masala dosa, which is a dosa wrapped with potatoes and other ingredients sauteed and cooked with spices, as the ingredients are placed in the center of the crepe-like dough.
