As I wandered through the market, I was looking for something that is not often sold in Japan. One of the items that caught my eye was a row of shelves behind a man in a checkered shirt. There, coconuts were lined up in rows. India is the world's third largest producer of coconuts, and this sight was symbolic of the abundance of coconuts. Not only coconuts themselves, but also coconut sugar and coconut oil are not uncommon in India.
However, in Japan, there are few opportunities to see coconuts, and I am not sure how they are handled. How do you peel that hard outer skin and how do you cook it afterwards? For Japanese people, coconuts are familiar through sweets and processed foods, but there are many unknowns about the raw coconut itself. When I think about it, the coconuts lined up on the shelves seemed fresh and even somewhat mysterious to me.
