A large jar-like pot was placed in front of a passing diner. Inside was a pot of freshly cooked rice. Since this is Kolkata, India, the rice is of course basmati rice. This restaurant seems to serve biryani, and this rice is for biryani.
Biryani is a mixed rice dish that is said to have its origins in the Muslims of the Indian subcontinent. It is made by mixing spices, basmati rice, meat, fish, eggs and vegetables. Most biryani is prepared with ingredients preserved on top of cooked rice, but the biryani here seems to be simple. I did not find any ingredients in the pot.
A man with a mustache was standing at the pot, stirring the rice inside with a plate he was holding. The freshly made rice was hot, and it was dripping with a delicious, appetizing smell all around.
