A woman wearing a hijab and a jellaba was standing in front of a stall selling potatoes in the old town of Meknes, shopping. She must have come to buy food for dinner. Potatoes are also a very popular food in Morocco. They produce a lot of potatoes, about 2 million tons a year, about the same as Japan.
When I think of Moroccan cuisine, couscous is hard to beat, but I always think of tagines. It is a dish cooked in a tajine pot. It is a dish in which vegetables with spices are steamed together with lamb or chicken, and of course, potatoes are used on many occasions. This woman must have a tajine pot in her house.
