Walking along the bustling streets, I was struck by the stores that lined the streets and the people, carts, and motorcycles that filled the streets. The most conspicuous among them was a long-established Punjabi restaurant established in 1895. A large crowd had gathered in front of it, and there was a sense of excitement in the air, as if they were in search of something special.
Punjabi cuisine is the traditional cuisine of the Punjab region, which stretches from northwest India to northeast Pakistan. Many of the things we first think of when we hear the words “Indian food,” such as tandoor dishes, naan, pakoras, and paneer salads, have their roots in this region.
It is interesting to note that there is a historical movement behind the rise of Punjabi food as a representative of Indian cuisine: with the partition of Pakistan in 1947, many Punjabi Sikhs moved to Mumbai as refugees. They opened many restaurants serving Punjabi food here. Mumbai is India's largest commercial city and the center of its restaurant culture. The Punjabi cuisine that became mainstream here gradually spread as a synonym for “Indian cuisine” and became known throughout the world.
